In a bowl, beat the cream cheese and add the chipotle chili, mayonnaise, and season with salt and pepper. Place a quarter in a piping bag and set aside. In another bowl, mix the tuna with the tomato, red onion, yellow corn, peas, serrano chili, and season with salt and pepper.
