Breaded Potato Pancakes with Tuna

  • 5 potatoes
  • 1 tablespoon flour
  • 1 tablespoon breadcrumbs
  • 1 egg
  • 200 grams canned tuna
  • salt
  • 1/2 cups oil , for frying

  • Boil the potatoes in 1.5 liters of water, let it boil for about 45 minutes or until they are soft.
  • Once the potatoes are cooked, drain them and wait for them to cool a bit before peeling.
  • Place the potatoes in a sturdy bowl and start mashing them to form a puree.
  • Once the puree is made, add salt, the egg, the tablespoon of flour, and the breadcrumbs.
  • Gently mix until the ingredients are combined and add the tuna.
  • Place a bit of breadcrumbs on a plate.
  • With a tablespoon, take a bit of the potato mixture and form the pancakes.
  • Coat them in breadcrumbs and fry in hot oil.
  • Once fried, transfer them to a plate with paper towels to remove excess grease.
