  • 1/2 cups pineapple juice, for the marinade
  • 1/2 tablespoons cumin, ground, for the marinade

  • 1 tablespoon vegetable oil
  • 1/2 cups onion
  • 1 cup pineapple, cut into cubes
  • 2 1/2 cups canned tuna, drained
  • 8 slices Bimbo® classic toasted bread
  • 1 cup cheese, manchego and mozzarella

  • Preheat the oven to 180°C.
  • Blend the guajillo chili with the onion, garlic, achiote, pineapple juice, cumin, salt, and pepper.
  • In a pan over medium heat, heat the oil and cook the onion until golden brown, add the pineapple, tuna, and marinade. Cook until the liquids are reduced. Adjust seasoning and remove.
  • Place the classic Bimbo® toasted bread on a baking tray, add a bit of cheese, the tuna al pastor, add more cheese, and bake for 5 to 10 minutes or until the cheese melts.
  • Serve with onion and cilantro, and accompany with a bit of lemon.
