  • 4 guajillo chilies, Clean, deveined and soaked. For marinade
  • 1/4 onions, for marinade
  • 1 clove garlic, for marinade
  • 50 grams achiote, for marinade
  • 1/2 cups pineapple juice, for marinade
  • 1/2 tablespoons cumin, ground, for marinade
  • enough salt and pepper, for marinade
  • 1 tablespoon vegetable oil
  • 1/2 cups onion
  • 1 cup pineapple, cut in cubes
  • 2 1/2 cups canned tuna, drained
  • 8 slices Classic Toasted Bread Bimbo®
  • 1 cup cheese, manchego and mozzarella
  • enough onion, finely chopped, to serve
  • enough fresh coriander, finely chopped, to serve
  • enough lemon, To accompany

Preparation

Preheat the oven to 180°C (357 °F)
Blend the guajillo chili with onion, garlic, achiote, pineapple juice, cumin, salt and pepper.
In a pan over medium heat heat the oil and cook the onion until golden brown, add the pineapple, tuna and marinade. Cook until liquids are reduced. Season to taste and remove.
Place the classic Bimbo® toast on a baking tray, add a little cheese, tuna al pastor, add more cheese and bake for 5 to 10 minutes or until the cheese melts.
Serve with onion and cilantro, served with a little lemon.

PRESENTATION

Garnish with onion, cilantro and serve with a few drops of lemon.

TIPS

It is important that at the time of cooking the tuna, the liquids are completely, so as not to damage the main characteristic of your classic toast. Because of the size of the tuna it is not necessary to marinate it, since at the time of cooking it will absorb all the flavor of the seasonings.
