  • 2 cups tuna, drained
  • 1 cup red onion, finely chopped
  • 1 cup yellow corn
  • 1 cup tomato, in medium cubes
  • 1/4 cups cilantro, finely chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon chipotle chile
  • pepper
  • 1 Sweet Crunchy Eva® Hydroponic Lettuce
  • queso fresco, in small cubes, for garnish
  • dressing, to accompany
Preparation

  • Mix the tuna, red onion, yellow corn, tomato, cilantro, mayonnaise, chipotle, and pepper in a bowl.
  • Place a leaf of Hydroponic Eva® Sweet Crunchy Lettuce on a plate and fill it with a bit of the tuna mixture.
  • Garnish with cheese and serve with your favorite dressing.
