Heat the olive oil in a skillet over medium heat, add the onion and garlic, and cook for 5 minutes. When the ingredients are lightly browned, incorporate the spinach, Herdez® tuna in oil, parsley, salt, and pepper. Mix and cook for 5 more minutes or until dry. Set aside.
Mix the egg, ricotta, feta cheese, salt, and pepper in a bowl. Mix and set aside.
Place a layer of filo pastry in a baking dish, use a brush to coat with olive oil, add another layer, brush with olive oil, and repeat the process until you have 5 layers. Then, add the spinach mixture and the cheese mixture, and cover with another 5 layers of filo pastry brushed with olive oil. Brush the last layer of filo pastry with olive oil and bake at 180 °C for 35 minutes or until the Greek pie is golden.
