Chipotle Tuna Meatballs

  • 1 cup canned tuna, drained
  • 1/3 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups fresh cilantro, finely chopped
  • 1/4 cups breadcrumbs
  • 1 egg
  • 1/3 cups asadero cheese, in cubes
  • 5 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 3 tablespoons chipotle chile
  • 1 tablespoon oregano, dry
  • 1/2 cups chicken broth
  • vegetable oil
  • salt
  • pepper
  • fresh oregano

  • In a bowl, mix the tuna with the onion, garlic, cilantro, breadcrumbs, and egg.
  • On a cutting board, form the meatballs using your hands, inserting a cube of cheese in the center, seal perfectly, and set aside.
  • For the sauce, blend the tomatoes with the onion, garlic, chipotle pepper, oregano, and chicken broth. Set aside.
  • In a medium skillet, sear the meatballs with a little oil and add the sauce, cook for 15 minutes, adjust seasoning. Serve with oregano.
