Tuna Croquettes

  • 1 stick butter, 3.1 oz
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon celery, chopped
  • 1/2 cups flour
  • 2 cups cow's milk
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 4 cans tuna, 0.6 lb each
  • 1 tablespoon parsley, finely chopped
  • 1 cup flour, for breading
  • 2 eggs, for breading
  • 1 cup breadcrumbs, for breading
  • 1 cup vegetable oil

  • In a skillet over low heat, melt butter and cook onion until translucent. Add celery and cook for a few minutes. Add flour and cook for 3 minutes.
  • Add milk and cook for about 5 minutes until thickened. Season with salt and pepper. Freeze mixture for 15 minutes.
  • In a bowl, mix milk, tuna, and chopped parsley. Form tuna croquettes and coat with flour and dip them in egg wash. Bread tuna croquettes with breadcrumbs.
  • In a small pot or deep skillet over high heat, heat oil. Fry tuna croquettes. Drain on a paper towel-lined plate. Serve tuna croquettes.
