Preparation
In a pan over low heat, melt butter and cook onion until transparent. Add the celery and cook a few minutes. Add the flour and cook for 3 minutes.
Add the milk and cook until it thickens, about 5 minutes. Season with salt and pepper. Freeze the mixture for 15 minutes.
In a bowl combine the mixture of milk, tuna and chopped parsley. It forms croquettes and breadcrumbs, passing flour, egg and bread crumbs.
Heat the oil over high heat in a pot or deep frying pan and fry the croquettes. Drain on absorbent paper and serve.
