Delicious and quick tuna patties, out of the ordinary. They are very easy to make, with ingredients that we always have on hand. My family loves them, and I'm sure yours will too.
Rinse the rice, place it in a pot with one and a half cups of water over medium heat, and let it cook until the water is absorbed. Let it cool.
Drain the tuna and place it in a bowl with the onion, parsley, cooked rice, and eggs. Mix until everything is combined.
Shape the mixture into small balls the size of a meatball. Coat each one with breadcrumbs until completely covered. Flatten and form the patties with your hands.
Heat the oil over medium heat. Fry them in oil and flip them once you see the edges turning golden brown.
When removing them from the oil, place them on a plate with paper towels. Let them cool a bit and serve.
