I cooked this recipe for the first time when my children were small, now they are older, and they love it, which is why I have continued to prepare it over the years.
Break the eggs into a bowl to check that they are good, stir with a fork adding salt (not too much because the tomato is also seasoned), put oil in a pan, when it's hot add the eggs and stir them, when they are cooked take them off the heat.
While the eggs are cooking, cut the tomatoes into four parts, put them in the blender along with the onion, add one cup of water and blend, put a pot on the fire with a little oil, once it's hot pour in the blended tomato, and add the seasoning.
When the tomato has been fried (changes color), we already have the cans of tuna opened, draining the liquid they contain, we add them along with the eggs, the serrano pepper can be cut into strips (it’s up to your taste to add one or two peppers).
Once all the flavors have been incorporated, we take it off the heat.
