This recipe I cooked for the first time when my children were small, now they are older, and they love it, that is why I have continued to prepare it over time.

Ingredients

5 portions
  • 2 cans tuna
  • 3 tomatoes
  • 1 piece onion
  • 2 serrano peppers
  • 10 eggs
  • oils
  • salt
  • fresh coriander
  • 1 teaspoon Seasoning juice
  • 2 cups Water

Preparation

Break the eggs in a bowl to check that they are well stirred with a fork adding salt (not too much because the tomato is also seasoned), put the oil in a pan when it is hot, put the eggs and stir, when they are ready to remove them from the fire.
While the eggs are cooking, cut the tomatoes in four pieces, put them in the blender with the onion, add a cup of water and liquefy, put a pot on the fire with little oil, since this hot one is poured the ground tomato, it is added the seasoning
When the tomato is already cold (it changes color) we already have the tuna cans open, removing the liquid it contains, we add it together with the eggs, the chile serrano can be cut into slices (this is to the pleasure of putting one or two chilies) .
Since all the flavors have been incorporated we remove it from the fire.

PRESENTATION

We serve it in a platter and for the presentation we chop cilantro, we sprinkle it on top, we arrange the rajitas in the central part like wings of fairy.
