Fresh Tuna Salad

This recipe is perfect for tasting at parties and gatherings. It is also great for filling canapés. The vinaigrette gives it a delicious flavor. If you have never tried fresh tuna loin, I invite you to do so; it’s perfect.

1 kilo fresh tuna, cut into cubes
1 red onion, cut into julienne
1 white onion, cut into julienne
2 serrano chiles, or green chili cut into julienne
2 yellow chilis, or yellow chili cut into julienne
2 red chiles, or red chili cut into julienne
1 green bell pepper, cut into julienne
salt, to taste
parsley, finely chopped
20 olives, in slices
2 tablespoons soy
1 cup white vinegar
1/2 cups olive oil
pepper, to taste
2 carrots, cooked, in slices
peas, in pods or green beans (optional)
1 red sangria lettuce
Preparation

Place the cubed tuna in a glass bowl. Set aside.
In another bowl, mix all the vegetables, seasonings, and spices.
Combine the tuna with all the ingredients and let marinate in the refrigerator (covered with plastic) for 1 hour.
Keep refrigerated until serving.
Adjust the seasoning; if desired, add more soy sauce, vinegar, or even a few drops of lemon.
Serve on a bed of romaine lettuce.
