This version of Mexican enchiladas is healthy as it contains tuna and the tortilla is not fried. You can enjoy them for lunch or dinner, and they are really easy to prepare.
150 grams green beans, cooked, cut into three pieces each
8 cherry tomatoes , cut in half
2 tablespoons jocoque
1/4 onions, chopped
salt , and pepper
corn tortillas, blue
green salsas
cheeses, shredded

Mix the tuna with the jocoque. In a hot skillet, add the onion; once it is sautéed, add the tuna mixture and let everything heat up. Mix a little. Add the asparagus, green beans, and cherry tomatoes.
Heat the tortillas on a griddle and heat the green sauce in the microwave. Assemble the enchiladas with the tuna and vegetable mixture, cover with the hot green sauce, and finish with shredded cheese.
