This version of Mexican enchiladas is healthy since it has tuna and the tortilla is not fried. You can enjoy them at lunchtime or dinner and they are really easy to prepare.

Ingredients

2 portions
  • 1 can tuna
  • 6 asparagus, bleached and cut into 5 pieces each
  • 150 grams green bean, cooked, cut into three pieces each
  • 8 cherry tomatoes, cut in half
  • 2 tablespoons jocoque
  • 1/4 onions, chopped
  • salt, and pepper
  • corn tortillas, blue
  • green sauces
  • cheeses, grated

Preparation

Mix the tuna with the jocoque. In a hot pan, add the onion, once this stir fry add the tuna mixture and let everything warm. Mix a little. Add the asparagus, green beans and cherry tomato.
Heat the tortillas in a comal and in the microwave heat the green sauce. Arrange the enchiladas with the tuna and vegetable mixture, dip in the hot green sauce and finish with grated cheese.

TIPS

If you do not have those vegetables, use the ones you have on hand.
