Potato and Tuna Croquettes with Herbs

Delicious croquettes for kids and adults, they are easy to prepare, and you can pair them with a nice fresh salad or saffron rice and a bit of sour cream. You choose the combination you like the most.

  • 2 potatoes
  • 2 cans tuna
  • 1 egg
  • 1/2 cups breadcrumbs
  • 10 leaves basil
  • 15 leaves fresh rosemary
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch garlic powder

  • Place the potatoes in a pot with water to boil until they are easy to mash into a puree.
  • Finely chop the basil and rosemary leaves and set aside.
  • In a bowl, mash the potatoes (without skin) until they become a puree.
  • Add the drained tuna, egg, and breadcrumbs to the puree, and mix.
  • After mixing, add salt, pepper, garlic powder, and herbs, and incorporate all the ingredients.
  • Shape the mixture into palm-sized balls and flatten them a bit to form the croquette shape.
  • Cook in a pan with a little oil and let them brown lightly on both sides.
