4 fresh tuna steak

4 tablespoons chipotle chile, for the dressing
90 grams sour cream
1/2 cups mayonnaise
8 flour tortillas
1/4 cups arugula, cut into strips
1/2 cups carrot, grated
1/2 cups radish, sliced
1/2 avocados, for garnish

Heat a skillet over high heat with the oil and sear the tuna fillets on all sides, seasoning with salt, pepper, and herbs. Set aside.
For the chipotle dressing, blend the chili, sour cream, and sour cream. Season with salt and pepper.
Slice the fillets into thin strips.
Warm the flour tortillas, add the tuna fillets, carrot, arugula, radishes, and finish with a little avocado.
