A delicious traditional Mexican recipe. Perfect for days when your pantry has few items. It is very economical and easy to make. Perfect for starting a meat-free diet.
Boil the potatoes with a bit of salt in boiling water. When they are well cooked, remove them from the water, peel them, and mash a little.
Open the cans of tuna and add them to the bowl of mashed potatoes. Stir. Check that it’s not lacking salt.
Fill the tortillas in the shape of tacos. (Put a portion of the potato with tuna in the middle of the tortilla and roll it up)
Heat oil in a deep skillet. When it’s hot, carefully place the previously made tacos one by one. Make sure they don't open.
Remove them from the oil and let them drain on paper towels for a moment.
Serve four tacos on each plate and top with cream, cotija cheese, a bit of lettuce, some slices of tomato, onion slices, and a bit of avocado to finish.
