Place the tuna medallions on a platter, spreading each with 1 ½ tablespoons of olive oil, salt, and pepper.
In a hot skillet, add ½ tablespoon of olive oil and sauté the onion for 10 minutes. Add the tomato, olives, garlic, salt, and thyme. Let it cook for 5 minutes. Reserve some sauce.
Cook the tuna on a grill for 5 minutes on each side; the center will remain pink. If you prefer, you can leave it longer for more cooking.
