Put the tuna medallions on a plate, brush each one with 1 ½ tablespoons of olive oil, salt and pepper.
In a hot frying pan, add ½ tablespoon of olive oil and sauté the onion for 10 minutes. Add the tomato, olives, garlic, salt and thyme. Leave for 5 minutes. Reserve some sauce.
Cook the tuna on a grill for 5 minutes on each side, the center will be pink. If you like, you can leave it longer so that it is more cooked.
