Tuna Medallion with Mediterranean Sauce

  • 2 Dolores® tuna medallions
  • 2 tablespoons olive oil
  • 1/2 onions, finely chopped
  • 4 Roma tomatoes, diced small
  • 10 black olives, pitted, quartered
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoons thyme
  • pinches salt, and pepper to taste

  • Place the tuna medallions on a platter, spreading each with 1 ½ tablespoons of olive oil, salt, and pepper.
  • In a hot skillet, add ½ tablespoon of olive oil and sauté the onion for 10 minutes. Add the tomato, olives, garlic, salt, and thyme. Let it cook for 5 minutes. Reserve some sauce.
  • Cook the tuna on a grill for 5 minutes on each side; the center will remain pink. If you prefer, you can leave it longer for more cooking.
