1 jar Cocina Mestiza® sweet and sour tamarind sauce, (for the sauce)
1 clove garlic, peeled and squeezed (for the sauce)
3 teaspoons fresh ginger, grated (for the sauce)
1 tablespoon sesame oil, (for the sauce)
1 tablespoon vegetable oil, (for the sauce)
1 teaspoon lime zest, (for the sauce)
1 tablespoon soy sauce
6 fresh tuna loins, yellowfin tuna (medallions)
1/2 cups sesame seeds

For the sauce, heat the oils in a pot. Add the garlic and ginger and stir. Before they brown, add the sweet and sour tamarind sauce, lemon zest, and soy sauce. Stir and adjust the seasoning with soy sauce or
salt and pepper.
Prepare the medallions: Season the medallions with salt and pepper. On a flat plate, spread the sesame seeds. Press the medallions on each side with the sesame seeds to form a crust on the top and bottom of each medallion. Place them without stacking on a plate.
Heat a little oil in a large non-stick skillet and sear the medallions on both sides, working in pairs if possible.
Reheat the sauce and create mirrors on the plate where it will be served. Place the medallions on top.
