  • 1/4 cups achiote paste
  • 1/4 cups pineapple juice

  • 1/2 cups onion, finely chopped
  • 2 cups Herdez® water-packed tuna flakes
  • 1 pineapple
  • 2 avocados
  • 1/4 cups onion
  • 2 tablespoons Habanero chile
  • 1/4 cups cilantro
  • 1 lime
  • salt

  • 1 cup Manchego cheese, grated

  • For the pastor marinade, blend the onion with the garlic, guajillo chili, achiote, pineapple juice, black pepper, cumin, and white vinegar for 5 minutes.
  • In a skillet, heat the oil and cook the onion, the Herdez® tuna in water, add the pastor marinade. Cook for 10 minutes and set aside.
  • Cut the pineapple in half and hollow it out.
  • In a bowl, using a fork, mash the avocado, add the onion, habanero, cilantro, lime juice, salt, and pepper; mix well.
  • Grill the tortillas on both sides and fill with the tuna and manchego cheese. Cook for 5 minutes or until the cheese is melted.
  • Cut into quarters, serve with guacamole and accompany with cilantro, onion, pineapple, and lime.
