Delicious sandwich perfect for lunch or picnics with friends. Very easy to make, full of flavor. It's a pleasant surprise to treat those you love the most.
1 red bell pepper, peeled, flaked, and cut into strips
200 grams Manchego cheese, shredded
2 cans tuna, drained
2 tablespoons mayonnaise
1/4 tablespoons Dijon mustard
3 green onions, sliced thin
1 tablespoon butter, at room temperature

Mix the tuna, mayonnaise, mustard, and green onion. Incorporate well.
Spread butter on one side of each slice of bread. On the unbuttered side of two slices, place half of the cheese, half of the peppers, and half of the prepared tuna on each. Top with the other two corresponding slices, with the buttered side facing out.
Heat a skillet or griddle. Toast each sandwich on both sides over low heat until the cheese melts and the bread is golden brown. Serve hot.
