Tuna Stew Empanadas

This recipe was made by my mom at home, and it turns out really delicious; we all love these tuna empanadas with tomato and onion, they are very easy to prepare.

  • 3 cans tuna, (water or oil)
  • 1 tomato
  • 1 onion
  • 1 bunch fresh cilantro
  • ketchup
  • 400 grams puff pastry
  • vegetable oil
  • 2 eggs, to give shine

  • 3 canned tuna, in water or oil

  • First, we will cook our tuna; for this, we will add the tomato and onion, and we will drain the tuna to later add it to our pan.
  • After about 3 minutes of adding the tuna, we will season with salt and pepper, and add the cilantro (finely chopped).
  • Now we add about two teaspoons of ketchup or to taste.
  • We turn off the heat and work with the dough; we need to roll it out with a rolling pin and cut circles to form our empanadas.
  • Once they are cut, we will fill them with the tuna, fold them in half, and seal the edges with a fork.
  • Place them on a greased tray or with parchment paper, and give them a shine with the egg; for this, you should put it in a bowl and mix very well. Now, with a brush, you will glaze your empanadas and put them in the oven at a temperature of 170°C for about 40 minutes or until they start to turn golden.
