Tuna tataki with cranberry sauce

  • 1 Dolores® tuna medallion, Tuny®
  • olive oil
  • 200 milliliters cranberry juice
  • 100 milliliters sunflower oil
  • 1/2 cups sugar
  • 1/2 bunches peppermint
  • salt
  • pepper

  • For the sauce: boil the cranberry juice with the sugar until cut in half.
  • For the mint oil, whiten the mint leaves, dry and liquefy with the sunflower oil.
  • For tuna: varnish the tuna, salt and pepper.
  • Heat the pan and seal the tuna.
  • Cut into thick cubes.
  • Serve with the cranberry sauce and add a few drops of the mint sauce on top.
