1 Dolores® tuna medallion, Tuny®
olive oil
200 milliliters cranberry juice
100 milliliters sunflower oil
1/2 cups sugar
1/2 bunches peppermint
salt
pepper

For the sauce: boil the cranberry juice with the sugar until reduced by half.
For the mint oil, blanch the mint leaves, dry, and blend with sunflower oil.
For the tuna: brush the tuna, season with salt and pepper.
Heat the pan and sear the tuna.
Cut into thick cubes.
Serve with the cranberry sauce and add a few drops of the mint sauce on top.
