1 Dolores® tuna medallion, Tuny®
olive oil
200 milliliters cranberry juice
100 milliliters sunflower oil
1/2 cups sugar
1/2 bunches peppermint
salt
pepper

For the sauce: boil the cranberry juice with the sugar until cut in half.
For the mint oil, whiten the mint leaves, dry and liquefy with the sunflower oil.
For tuna: varnish the tuna, salt and pepper.
Heat the pan and seal the tuna.
Cut into thick cubes.
Serve with the cranberry sauce and add a few drops of the mint sauce on top.
