Tuna Volcanoes

Try these delicious tuna volcanoes, as they are very crunchy, spicy, and tasty thanks to the flavor brought by the tuna al pastor, which is combined with manchego cheese and a touch of red sauce.   • 1/4 onions, grilled
  • 1 clove garlic, grilled
  • 5 guajillo chiles, rehydrated, seedless
  • 2 morita chiles, rehydrated, seedless
  • 1/2 cups achiote
  • 1/2 cups shrimp broth
  • 1 teaspoon ground cumin
  • 1 teaspoon black peppercorn
  • 1/4 cups apple cider vinegar
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 3 cups canned tuna, drained
  • corn tortillas
  • 2 cups Manchego cheese, grated

  • Blend the onion, garlic, guajillo pepper, morita pepper, achiote, shrimp broth, cumin, pepper, and vinegar for 5 minutes or until you obtain a homogeneous sauce. Set aside.
  • Heat vegetable oil in a skillet over medium heat, add the onion and cook for 2 minutes. Then, add the tuna, drizzle with the sauce, and cook over medium heat for 10 minutes. The tuna mixture should have a slightly dry consistency to prepare the volcano.
  • Heat a little oil over medium-high heat on a griddle, place the tortillas, and let them brown. When you flip them, add a little tuna, top with some cheese, let the cheese melt, and let the tortilla brown on the bottom. Remove.
  • Serve the tuna volcano on a wide plate, garnish with pineapple, onion, and cilantro, and accompany with guacamole, lime, and Sidral Mundet® Apple flavor.
