Ingredients: 1/4 onions, grilled; 1 clove garlic, grilled; 5 guajillo chiles, rehydrated, seedless; 2 morita chiles, rehydrated, seedless; 1/2 cups achiote; 1/2 cups shrimp broth; 1 teaspoon ground cumin; 1 teaspoon black peppercorn; 1/4 cups apple cider vinegar; 2 tablespoons vegetable oil; 1/2 cups onion, finely chopped; 3 cups canned tuna, drained; corn tortillas; 2 cups Manchego cheese, grated; vegetable oil, to brown the volcanoes; pineapple, grilled, sliced, for decoration; onion, finely chopped, for decoration; cilantro, finely chopped, for decoration; guacamole, for serving; lime, for serving; Sidral Mundet® Apple flavor

Blend the onion, garlic, guajillo pepper, morita pepper, achiote, shrimp broth, cumin, pepper, and vinegar for 5 minutes or until you obtain a homogeneous sauce. Set aside. Heat vegetable oil in a skillet over medium heat, add the onion and cook for 2 minutes. Then, add the tuna, drizzle with the sauce, and cook over medium heat for 10 minutes. The tuna mixture should have a slightly dry consistency to prepare the volcano.
