Zucchini Patties with Tuna

This dish is loved by my family and me, as it's a great way to eat vegetables with protein and a very delicious flavor. A family friend taught me this recipe a few years ago, and since then we have kept it as part of our menu.

  • 1 can tuna
  • 2 eggs
  • 1 zucchini, tender
  • 1 bunch fresh cilantro
  • vegetable oil
  • salt, to taste

  • Heat the oil in a skillet. Meanwhile, beat the eggs in a bowl. Empty the can of tuna and mix.
  • Grate the zucchini raw and add it to the bowl.
  • Finely chop a little cilantro and add it to the mixture.
  • Season with salt and pepper to taste. Shape the mixture into patties with your hands and fry them until golden brown on each side.
  • Fry in the preheated skillet, shaping them into patties.
