Veracruz-style Fish with Yellow Chiles

Veracruz-style fish is a typical dish that merges the flavors of Mexican cuisine with Spanish cuisine; this delicious dish is made with tomato, olives, capers, and yellow chiles. Accompanied by a little white rice, it will be ideal for any occasion and will look spectacular.

  • 1/4 cups olive oil
  • 4 cloves garlic, finely chopped
  • 1 white onion, fileted
  • 4 tomatoes, poached and finely chopped
  • 1/4 cups capers
  • 1/2 cups green olives, sliced
  • 1/2 cups parsley, finely chopped
  • 1 cup güero chile, with a bit of brine
  • 2 leaves bay
  • 4 fish fillets
  • 1 pinch oregano
  • 1 pinch salt

  • Heat a skillet over medium heat with olive oil, cook the garlic, onion, and tomato, until you achieve a thick sauce.
  • Add the capers, olives, and cook for 3 more minutes to incorporate the flavors. Add the parsley, yellow chiles, bay leaf, and cook for 5 more minutes.
  • Add the fish to the sauce, cover it with the sauce, sprinkle oregano to taste, and cover to cook well.
  • Serve and enjoy.
