White Fish in Chipotle Chile and Tamarind Sauce

  • 6 sea bass fillet, or white fish
  • 1/2 cups tamarind concentrate
  • 2 tablespoons chipotle chile, in can
  • 1/2 tablespoons salt
  • 4 tablespoons olive oil
  • 4 tablespoons lime juice
  • 1/2 onions, sliced
  • 1/2 tablespoons pepper
  • 3 tablespoons unsalted butter

  • Preheat the oven to 200 degrees Celsius.
  • In a medium-sized deep bowl, combine the tamarind concentrate, chipotle chile, salt, olive oil, lemon juice, and pepper. Mix well.
  • Grease a large rectangular baking dish and place the 6 fish fillets inside. Season the fillets with salt and pepper.
  • Place the sliced onion on the fillets and pour the tamarind sauce over them.
  • Bake the fillets for 15-20 minutes or until when cutting a fillet with a fork it separates easily.
  • Serve the fillets on a large platter or individual plates.
