I love this fish recipe for preparing any day of the week when I didn't have time to plan the meal. The hints of oriental flavor elevate the fish and pair perfectly with rice or couscous.
1/4 cups green onion, chopped, the white and green part only
1 teaspoon fresh ginger, finely grated

Preheat the oven to 350 F or 180 degrees Celsius.
Mix the oil, lemon juice, rice vinegar, Dijon mustard, honey, and ginger in a bowl. Stir well and season with salt and pepper. Add the chopped green onions sliced thinly.
Grease a pyrex with a little butter or oil and place the fish in it. Cover with the prepared sauce and let marinate for 5 minutes.
Put in the oven for 10 minutes or until the fish is cooked (depends on the thickness of the fish).
Remove from the oven and serve with sauce on top.
