Chicken Salad Rolls

These rolls made with sandwich bread and a delicious creamy chicken salad with tomato and celery will delight the little ones and even the adults. A great option for lunch this back-to-school season.

  • 1 cup chicken, cooked and shredded
  • 1/2 cups celery, sliced
  • 1/2 cups tomato, cut into small cubes
  • 1/2 cups bacon, fried and finely chopped
  • 1/2 cups sour cream, reduced fat
  • 1/4 cups low-fat mayonnaise
  • 3 tablespoons mustard
  • salt
  • pepper
  • 10 sandwich bread, without crusts
  • 1 avocado, sliced thin
  • 10 slices American cheese

  • For the salad, in a bowl mix the chicken with the celery, tomato, bacon, cream, mayonnaise, mustard, and season with salt and pepper to taste.
  • On a cutting board, use a rolling pin to lightly flatten the bread, place the yellow cheese, the chicken salad, a slice of avocado, and roll up to form the rolls. Cut in half.
  • Serve your rolls and enjoy.
