Dissolve each food coloring with 4 tablespoons of water. Set aside.
Divide the rice into 4 round containers, adding 2 tablespoons of each color to each container to create 4 different colors. Mix and set aside.
Lay the nori sheet on a sushi mat, using a bowl of water to wet your hands. Place rows of rice of each color along the seaweed, and compress all the rice well to make it even, as shown in the video.
Add the cucumber horizontally, then the cheese, avocado, and mango on just one corner of the rice.
Roll the sushi horizontally, pressing down with each turn to compact the roll well. With a knife, cut the sushi into thin slices, first wetting the knife for easier cutting. Cut the roll in half, then cut that half in half, and continue this way. Serve on a platter, accompanied by soy sauce and iced tea.
