Grate the stale bread using a grater, then add some grated parmesan. Set aside.
Place the chicken cutlets on a board, season with salt and pepper, add a slice of ham and another slice of cheese. Roll tightly pressing to make the roll firm.
Beat the eggs with the milk and garlic powder in a bowl, then season with salt and pepper. Using tongs, dip the breasts in flour and then in the egg.
Remove the excess egg and coat with the breadcrumbs, pressing to compact.
