Delicious Elbow Pasta with Tuna

Because kids love this classic salad, we give you Grandma's recipe for these creamy elbow pastas with tuna, packed with vegetables that make it colorful and nutritious. It's an excellent idea for lunch, stepping away from the conventional sandwich.

  • 1 cup elbow pasta
  • 1/2 cups yellow corn kernels, yellow, shelled
  • 1/2 cups peas, cooked
  • 1/2 cups broccoli, cut into small florets and cooked
  • 1/2 cups carrot, cut into cubes, cooked
  • 1/2 cups cucumber, cut into cubes
  • 1 cup canned tuna in water, drained
  • 1 tablespoon lime juice
  • 1/2 cups low-fat mayonnaise
  • 1 tablespoon salt
  • 1 tablespoon pepper

  • Cook the pasta in a pot with boiling water and salt according to the package instructions, drain and cool.
  • In a bowl, mix the cooked elbows with corn, peas, broccoli, carrot, cucumber, tuna, lemon juice, mayonnaise, and season with salt and pepper to taste.
