Elbow Pasta with Chayote, Kale, and Cheese

This elbow pasta is ideal for moms who are breastfeeding, as kale is rich in vitamins A and C that help care for your baby's skin, and cheese is also beneficial for healthier skin.

  • 2 liters water
  • 1 teaspoon salt
  • 1 cup elbow pasta, #4
  • 1 chayote, boneless
  • 1 cup kale
  • 1/3 cups whipping cream
  • 1 teaspoon butter
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1/4 cups Parmesan cheese, grated

  • In a pot with boiling water and salt, cook the pasta until al dente. Drain and set aside.
  • In another pot with boiling water and salt, boil the chayote until soft, about 15 minutes. Add the kale and cook for 4 more minutes.
  • Cut the chayote into small pieces, blend with the kale and heavy cream.
  • In a deep skillet, heat the butter with the sauce until it boils, add the pasta, mix and season.
  • Serve on a plate and garnish with grated Parmesan cheese.
