Healthy Nuggets

These healthy nuggets are perfect for lunchboxes or for feeding your kids. They are made with turkey breast, vegetables, and a little Parmesan cheese. They are very easy to make, and the best part is that they are not fried; you bake them with a little vegetable oil spray. This way, you can control the amount of fat your kids consume.

  • 150 grams turkey breast
  • 4 potatoes
  • 2 tablespoons sour cream
  • 1 tablespoon butter
  • 1 1/2 tablespoons onion powder
  • 1 tablespoon garlic, powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons Parmesan cheese
  • 1 cup breadcrumbs
  • 3 tablespoons parsley
  • 1 tablespoon cooking spray

  • Preheat the oven to 180°C.
  • Peel the potatoes and cut them into medium cubes. Boil them in salted water until tender. To check if they are cooked, insert a knife into the center; if it goes in easily, the potatoes are ready.
  • Drain the water from the potatoes and place them in the processor, add the butter, cream, onion, and garlic powder, salt, and pepper. Process until you have a puree.
  • Cut the turkey breast into pieces and add it to the processor, then add the breadcrumbs and Parmesan cheese. Process until all ingredients are combined.
  • Grease a baking rack or a baking dish. Form small balls of the mixture using two spoons and place them on the rack or the baking dish. Use a fork to press them down to shape them like nuggets.
  • Bake at 180°C for 15 minutes.
