Picadillo Pancakes

  • 1 cup pancake mix
  • 3/4 cups whole milk
  • 1 egg
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 cup tomato, in small cubes
  • 1 cup carrot, in small cubes
  • 3 cups ground beef
  • salt
  • pepper
  • 1 cup tomato soup
  • 1 cup peas, cooked

  • tomato sauce

  • Blend the pancake mix, milk, egg, and butter. Set aside.
  • Add the oil to a pot and fry the onion and tomato for 5 minutes. Then, add the carrot and ground beef, cook for 5 more minutes, and season with salt and pepper. Pour in the tomato broth and peas and cook for 5 minutes or until the liquid reduces. Set the picadillo aside.
  • Grease a cupcake mold with butter and flour. Pour a bit of the pancake mixture, add some picadillo, and finally, a potato face on top of each pancake. Finally, spray with cooking oil and bake the picadillo pancakes at 180 °C for 30 minutes.
  • Serve the picadillo pancakes on a board and accompany with tomato sauce.
