Piperrada

A typical dish from the Basque Country, ideal for fighting the cold of these months. It is recommended for children from one year old.

  • 1/2 ripe tomatoes
  • 1 green bell pepper
  • 1 red bell pepper

  • Peel the tomato, remove the seeds, cut into small pieces, and set aside.
  • Wash the peppers, remove stems and seeds, and cut into not too large pieces.
  • Peel and finely chop the onion and garlic.
  • In a pot with a little oil, sauté the onion, garlic, and peppers until golden.
  • After five minutes, add the tomato, sugar, and salt.
  • Keep boiling for 10 minutes.
  • Lower the heat to medium and let it cook for another 15 minutes.
  • Crack the egg, pour it on top, and stir with a wooden spoon until the egg white sets.
