Potato, leek, carrot, and pea puree

1 tablespoon unsalted butter
1/3 cups leek, washed and chopped (only the white part)
1 potato, large, peeled and diced
1 1/4 cups vegetable broth, low-sodium chicken broth
2/3 cups frozen peas
1 carrot, medium, peeled and chopped

Melt the butter in a pan and cook the leek for 3-4 minutes.
Add the potato and carrot to the pan along with the broth.
Wait for it to boil, then reduce the heat, cover, and cook for 10 minutes.
Add the peas and continue cooking until the vegetables are tender for 6 minutes.
Blend everything in a food processor or blender until you achieve a smooth puree.
