Potato Patties with Ham

  • 4 potatoes, whole, with skin
  • 1/2 cups butter, melted

  • 1/2 cups cornstarch
  • 1 cup deli ham, in small cubes
  • 1 egg
  • 6 tablespoons vegetable oil, to fry the patties
  • salad, with a mix of lettuce to accompany

  • In a small pot over medium heat, cook the potatoes with the water for 25 minutes, or until soft. Drain, let cool, and set aside.
  • On a cutting board, peel the potatoes, place them in a bowl, and using a masher, mash until you have a pasty consistency, add the butter, season with salt and pepper, add the cornstarch, ham, egg, and mix until fully integrated and homogeneous. Form patties with the help of a spoon and set aside.
  • In a skillet over low heat, heat the oil and cook the patties until golden brown. Place on paper towels to remove excess oil.
  • Serve accompanied by a mixed lettuce salad.
