Quesapizzas

With this pizza recipe, you can give a twist to your quesadillas and turn them into a delicious pizza very easily. These quesapizzas are good for any time of day and you can add any ingredients you like, as the special thing about this recipe is the tomato sauce, to which you can add or not add the chipotle pepper, for a spicy touch.

  • 8 tomatoes, ripe
  • 2 cloves garlic
  • 2 sprigs thyme, fresh

  • chipotle chile
  • 10 flour tortillas
  • 2 cups Manchego cheese, grated
  • 1 cup pepperoni
  • 1 cup deli ham
  • 1 cup bacon
  • 1/2 cups green bell pepper
  • 1/2 cups red bell pepper
  • 1/2 cups yellow bell pepper
  • 1/2 cups orange bell pepper
  • 1 cup red onion
  • 1 cup button mushrooms

  • Heat a pot with water over medium heat, wait for it to boil and add the tomatoes with a cross cut on the tip, add the garlic, thyme, salt, and cook for 5 minutes; remove.
  • Remove the skin and seeds from the tomato, and blend with the garlic and salt. Fry the blended sauce with the oil and cook for 10 minutes, until it changes color, then mix in the chipotle pepper. Set aside.
  • Preheat the oven to 180 °C.
  • Place the flour tortillas on a baking sheet, fill with cheese, place another tortilla on top, add more cheese and ingredients to your liking.
  • Bake for 10 minutes, serve, and enjoy accompanied by the sauce.
