Ingredients: water; 8 tomatoes, ripe; 2 cloves garlic; 2 sprigs thyme, fresh; salt; vegetable oil; chipotle chile; 10 flour tortillas; 2 cups Manchego cheese, grated; 1 cup pepperoni; 1 cup deli ham; 1 cup bacon; 1/2 cups green bell pepper; 1/2 cups red bell pepper; 1/2 cups yellow bell pepper; 1/2 cups orange bell pepper; 1 cup red onion; 1 cup button mushrooms

Heat a pot with water over medium heat, wait for it to boil and add the tomatoes with a cross cut on the tip, add the garlic, thyme, salt, and cook for 5 minutes; remove. Remove the skin and seeds from the tomato, and blend with the garlic and salt. Fry the blended sauce with the oil and cook for 10 minutes, until it changes color, then mix in the chipotle pepper. Set aside.
