Quinoa and Vegetable Spring Rolls

  • 1 rice paper
  • 1/3 cups quinoa
  • 1/2 red bell peppers
  • 1/2 cups spinach
  • 1/2 cups carrot
  • 1/2 cucumbers
  • 1 teaspoon salt
  • 1 pinch pepper
  • 1 cup grapes

  • Soak the quinoa and drain the water.
  • Place the quinoa in a pot with 2/3 cup of water, a pinch of salt and pepper, and bring to a boil over medium-low heat for 10 minutes with the pot covered.
  • While the quinoa is cooking, cut the carrot, cucumbers, and bell pepper into thin sticks.
  • In a large bowl, put some water and soak one of the rice papers for 20 seconds.
  • Lay the rice paper flat and add quinoa, bell pepper, carrot, cucumbers, and spinach on top.
  • Roll the rice paper with all the ingredients inside. Cut the roll into small pieces.
