Tuna Salad Jicatacos

  • 1 1/2 cups canned tuna in water, canned, drained
  • 1/4 cups onion, finely chopped
  • 1/4 cups carrot , grated
  • 1/4 cups tomato , finely chopped
  • 1/4 cups avocado, in cubes
  • 1/4 cups peas
  • 3 tablespoons cilantro, finely chopped
  • 1/2 cups mayonnaise
  • 1 tablespoon mustard
  • salt
  • pepper
  • 1 jicama, peeled and halved to make the tacos
  • alfalfa, for garnish
  • mango, in cubes, for garnish

  • Mix the tuna, onion, carrot, tomato, avocado, peas, cilantro, mayonnaise, mustard, salt, and pepper in a bowl until you have a homogeneous mixture. Set aside.
  • Slice the jicama super thinly using a mandoline, so that they resemble tortillas.
  • Fill with the tuna salad and form the tacos.
  • Serve and garnish with alfalfa and mango. Enjoy.
