Ingredients: 1 1/2 cups canned tuna in water, canned, drained; 1/4 cups onion, finely chopped; 1/4 cups carrot, grated; 1/4 cups tomato, finely chopped; 1/4 cups avocado, in cubes; 1/4 cups peas; 3 tablespoons cilantro, finely chopped; 1/2 cups mayonnaise; 1 tablespoon mustard; salt; pepper; 1 jicama, peeled and halved to make the tacos; alfalfa, for garnish; mango, in cubes, for garnish

Mix the tuna, onion, carrot, tomato, avocado, peas, cilantro, mayonnaise, mustard, salt, and pepper in a bowl until you have a homogeneous mixture. Set aside. Slice the jicama super thinly using a mandoline, so that they resemble tortillas.
