Turkey Meatballs with Hidden Vegetables

This is a delicious recipe for turkey meatballs with hidden vegetables. It's a healthy meal ideal for getting your kids to eat vegetables without noticing. It has a rich tomato sauce, and the meatballs are made with turkey breast, making them much healthier.

  • 4 tomatoes
  • 1 clove garlic

  • 1 cup tomato purée
  • 2 cups water
  • 2 tablespoons olive oil

  • 600 grams turkey breast, ground

  • 1 tablespoon cornstarch
  • 1/2 cups Parmesan cheese
  • 2 carrots
  • 1 celery
  • 1/4 heads broccoli

  • Peel the celery and carrot. Dice the onion, carrot, and celery into very small cubes.
  • Clean the broccoli head and cut it into florets. Cook the broccoli and carrot in boiling salted water. Drain the water and place the vegetables in a bowl with cold water and ice to prevent them from overcooking.
  • Sauté the remaining vegetables in a bit of oil until soft. Add the cooked vegetables, salt, pepper, chopped parsley, Parmesan cheese, and cornstarch to the ground turkey breast. Mix until all ingredients are incorporated.
  • Form small balls using two spoons or an ice cream scoop. This way, all the meatballs will be the same size.
  • For the sauce: Boil the tomatoes and onion in boiling water for 3 minutes. Transfer the tomato and onion to a blender, add the garlic clove. Blend until all ingredients are integrated.
  • Add a bit of oil to a hot skillet and strain the sauce into the skillet. Add water and season to taste.
  • Place the meatballs in the sauce and let them cook for 30 minutes. You can cover the skillet for even cooking or turn the meatballs to cook them evenly.
  • Serve the meatballs on a plate and pour the sauce over them.
