Vegetable Patties with Creamy Cauliflower and Chipotle Dressing

  • 1/4 onions, finely chopped for the patties

  • 1/2 cups oats, ground for the patties
  • 1 teaspoon garlic, powder for the patties

  • 2 tablespoons fresh cilantro, finely chopped for the patties

  • water, hot for the dressing

  • 1 clove garlic, for the dressing
  • 3 tablespoons chipotle chile, in adobo for the dressing
  • 1 tablespoon lime juice, for the dressing

  • fresh cilantro, to serve

  • For the patties, in a bowl mix the onion, California Bits Eva®, oats, garlic powder, cumin, egg, cilantro, salt, and pepper until fully combined. Using your hands, form patties until the mixture is finished. Set aside.
  • In a skillet with oil, cook the patties over medium heat, drain to remove excess fat. Set aside.
  • For the dressing, cook the Cauliflower Bits Eva® in a small pot with hot water and salt for 3 minutes over medium heat, drain and cool. Set aside.
  • Blend the Cauliflower Bits Eva®, sour cream, milk, garlic, chipotle, and lemon juice until smooth, season with salt and pepper. Set aside.
  • Serve the patties with creamy chipotle dressing, garnish with cilantro leaves. Enjoy.
