Vegetarian Nuggets

Treat your kids to these delicious and crunchy vegetarian nuggets. They are made with broccoli and cheddar cheese, which adds a rich flavor. The best part is that these nuggets go in the oven, making them low in fat. You can send them with your kids as lunch for school or as a tasty meal at home.

  • 2 cups broccoli
  • 3 eggs
  • 1 cup breadcrumbs
  • 1 cup cheddar cheese
  • 1 1/2 teaspoons onion powder
  • 1 tablespoon garlic powder
  • salt

  • Preheat the oven to 180°C.
  • Cut the broccoli and cook it in boiling salted water until soft. Place the broccoli in the food processor and add the eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  • Blend until you have a compact paste that is easy to handle. Form balls with the help of an ice cream scoop and place them on a baking sheet lined with parchment paper.
  • Gently press the Nuggets with a fork and bake at 180°C for 20-25 minutes.
