  • 2 chicken breasts, butterflied
  • 8 leaves butterhead lettuce
  • 2 cups crimini mushroom, sliced
  • 1 red onion, cut into cubes
  • 1 tablespoon olive oil

  • 4 tablespoons sugar, for the marinade
  • 6 tablespoons soy sauce, for the marinade
  • 1 teaspoon sesame oil
  • 2 teaspoons rice vinegar
  • 2 teaspoons garlic, finely chopped

  • In a bowl, mix the marinade ingredients. Divide it into two equal parts and set aside. Marinate the chicken breast with one part of the marinade and let it rest in the refrigerator for 20 minutes.
  • Prepare your Weber® grill for medium direct heat (350º - 450ºF or 175º - 232ºC). Place a Weber vegetable basket over direct heat and preheat for 10 minutes.
  • Remove the chicken from the marinade and place it on the grill over medium direct heat. Do this for 7 minutes on each side, when the internal temperature reaches 165ºF or 73ºC, remove the chicken from the grill and set aside. Discard the marinade.
  • In a bowl, mix the onion and mushrooms, add the olive oil, and season to taste with salt and pepper. Add the vegetable mixture to the basket and grill over medium direct heat for 12 minutes, stirring occasionally. Pour the mixture into a bowl and set aside.
  • Cut the chicken into strips or cubes and mix it in the bowl with the vegetable mixture. Add the reserved marinade and return to the grilling basket. Cook over direct heat for another 8 minutes. Remove and serve.
