Grilled Salad with Flank Steak

  • 400 grams flap steak
  • 4 Romaine lettuces, baby, halved
  • 2 cups cherry tomato, halved
  • 1/2 red onions, in thin slices
  • coarse salt
  • black pepper
  • olive oil
  • 1/2 cups olive oil, for the vinaigrette
  • 1/2 cups balsamic vinegar, for the vinaigrette
  • 2 tablespoons Dijon mustard, for the vinaigrette
  • 1 clove garlic, finely chopped, for the vinaigrette
  • coarse salt, for the vinaigrette
  • black pepper, for the vinaigrette

  • In a small bowl, using a whisk, mix all the vinaigrette ingredients until emulsified. Set aside.
  • Prepare your Weber grill for high direct heat (450º - 550ºF - 232º - 287ºC). Pour a little vinaigrette in the center of the lettuces and let it rest.
  • Make a few incisions about ½ cm deep in the flank steak, diagonally against the grain of the meat. Brush the cut with olive oil, season with salt and pepper to taste on both sides.
  • Transfer the flank steak to your grill over high direct heat for 3 to 4 minutes per side for medium. Grill the halves of lettuce over high direct heat for 1 minute with the cut side down, remove from the grill and set aside.
  • Cut the meat into 1.5cm x 1.5cm cubes and set aside. To serve, place 2 halves of lettuce and top with meat, tomato, onion, and vinaigrette to taste.
